As You Like It restaurant in Brussels

This is a painting of 'As You Like It' - the restaurant I owned and operated in Brussels, Belgium in the mid 1970s.  It was painted by the distinguished Amercian painter Olaf Olaffson - who was one of my customers.   I was 22 years old when I opened the restaurant.  Before moving to Brussels I worked as a steward on a cruise ship (as a student holiday job) and as a manager for Trusthouse Forte Hotels.  My first job in Brussels was as Head Barman of the Hotel Astoria and then working in a British pub in the city centre.  After two years running my restaurant, I returned to the UK to become an educator, but continued to work in hospitality in the events sector, managing operations at Ascot, Lords cricket ground and Farnborough Air Show.  In the 1990s I worked as a consultant specialising in advising local authorities on their catering provision.   And in the 2000s I was the world's first and only professor of travel catering.  One way or another I have worked in nearly every sector of the hospitality industry.
